Ingredients

  • 2 cups brown rice flour
  • 1/2 tbl baking soda
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 1/4 cup sugar (or 20 drops vanilla crème stevia)
  • 3 eggs
  • 1 3/4 cup flax milk
  • 3/4 cup pumpkin puree (or banana puree)

Directions

  1. Blend pumpkin in a blender until its nice and smooth.
  2. Combine all other ingredients in a large bowl.
  3. Stir in pumpkin and mix well.
  4. Cook on medium using about 1/4 cup of mix for each pancake.
